Agreed. Thanksgiving is all about familiarity. No one wants surprises on the menu. Whatever else is on the table, there must be my mother's cloverleaf rolls, and her waldorf salad. And each year, my favorite moment of theatre is when someone's ordinarily intolerant of new food child, looks curiously at the marshmallow-topped sweet potatoes on the buffet and asks to try them.

Not to worry. Dave got his foodie fix with Doug, who sent him pics of his oysters casino fresh out of the oven. For me, the best part of the day is the ritual of the cooking. All day. With friends or family and sometimes both. The meal itself is just the punctuation at the end of a day full of working together in the kitchen with good wine, good conversation, and plenty of tastings and snacks along the way. One of the best dishes on the table this year turned out to be a cranberry-dried cherry compote that we threw together at the last minute using ingredients that we happened to have on hand.

It is our tradition for the last 25 plus years to have the Grand Marnier Apricot Stuffing from the Silver Palate Good Times cookbook. (Equally as good without the pork sausage when we have vegetarians amongst us.) What was once very fancy when the book was published in 1984 is now our family's comfort food and was the clear favorite on the table yesterday. Although the recipe on the next page, Thanksgiving Potatoes with cream cheese and sour cream is a close second!

I'm a traditionalist, too (although we do serve our turkey with red chile because we live in New Mexico). I honestly don't have a must-eat dish, although I do love my homemade rolls.

Favorite Thanksgiving comfort food: the icebox rolls made from our old family recipe and printed in a church cookbook, now tattered and stained. Favorite Thanksgiving quip about your favorite food? "Ah yes, the sweet potato and its long-time companion, the marshmallow, will appear on the table today."
