I was so inspired that when I made quiche the other night, I used Mastering the Art of French Cooking instead of my old fave, Fannie Farmer. I allowed the onions to simmer in butter for one hour, as instructed. The quiche turned out beautifully. Now I am emboldened. Waiting will be hard, but good menu plan.
